» Terroir


The grapes for this vegan and organic wine are sourced from Cañada Marchante, in the Requeña region. Vines are grown at 700 meters above sea level in a balanced, caring, and sustainable way. The producer fosters vineyard biodiversity and prioritizes low yield, focusing on quality rather than quantity. Optimal planting densities are respected, so as not to interfere with the microbiological activity and structure of the soil, which is comprised of loam and medium-deep sandy limestone.

» Grape harvest



Grapes were harvested in August 2020.

» Winemaking


A After rigorously testing ripeness, the winery’s technical crew begins harvesting in the first week of September. The harvesting is done at night to avoid juice oxidation and preserve delicate aromas. At the cellar, free-run juice (resulting from gentle pneumatic pressing) is settled using a must chiller. Clear must then goes to fermentation at a controlled temperature to bring out optimal aromatic expression. When fermentation is complete, the wine is racked and kept on its fine lees, thus protecting it from any oxidation and bringing extra body and smoothness to its profile. Fining, stabilization, and filtering processes, which occur pre-bottling, are carried out with the greatest care in order to preserve all of the wine’s character.

» Tasting Notes


A bright, clean, straw-yellow colour with greenish reflections. Characteristic Sauvignon Blanc aromas, such as tropical fruit, flowers, and fennel, come through on the nose. Fresh and full, with well-defined fruit character. Ample length enhanced by a pleasant acidity and floral notes.

The final selection was made on April 12, 2021, by our tasting committee, whose members have over 40 years of combined experience in wine tasting.

»Bottling


First batch


The L211202 batch was bottled in Montreal on December 2, 2021. A total of 11,196 bottles were produced.


A tasting was done on December 7, 2021, to ensure the profile and quality conformity of the bottled wine with the initial selection. Quality control, including an organoleptic analysis, was completed on December 9, 2021.

The total sulphite limit for organic wines is less than half of what is tolerated by the International Organization of Vine and Wine (OIV).
